Winemaking

Our experienced staff coordinates, facilitates and guides the process through traditional best practices, while capturing the benefits of new technology, new materials and new methods.  With discretion and sensitivity, we work directly with clients or clients’ representative winemakers to set and achieve conceptual and practical goals.

Monterey Wine Company programs can be all inclusive, from grapes to bottling, to simply providing pinpoint processing at any step along the way.  Our strategically designed cellars, barrel rooms and integrated equipment provide for efficient, sanitary and quality minded systems for the natural progression of product aging and development.

Our up-to-date program controlled bottling line affords levels of cost-conscious efficiency, while ensuring protection of varietal quality and product integrity.  Line flexibility includes 187 ml to 1.5 liter size containers, standard cork or screw cap closure, pressure sensitive front, back, and neck capabilities, glued case closure, and flexible print and label application.

Compliance

Our experienced wine and material trackers work with The Winemaker’s Database for
discreet record keeping and offer our help and guidance to understanding and
procuring licensing/permits, registration of wine formulas and COLA approvals.

Quality Assurance

Whether through routine wet chemistry work, the use of bio-luminescence for equipment sanitation checks, or the latest enzymatic assay, our laboratory measures the standards by which we operate.  From straight labels to dissolved oxygen and volatile acidity, to nutrient rich fermentations, we measure, log, correct, and maintain parameters as specified by sound procedures guided by client protocol.
